Then when the perfect watermelons arrived at Vive this week, we knew they had to feature in this weeks organic recipes. Not wanting to forget our friends at 41 deg just yet, we&#8217;ve combined this simple watermelon salad with their perfect salmon patties for yet another fast, simple and delicious lunch.<\/p>\n<div id=\"attachment_1572\" style=\"width: 288px\" class=\"wp-caption aligncenter\"><a href=\"http:\/\/www.vivehealth.com.au\/blog\/wp-content\/uploads\/2013\/10\/salmon-vive.jpg\"><img aria-describedby=\"caption-attachment-1572\" decoding=\"async\" loading=\"lazy\" class=\"size-medium wp-image-1572\" alt=\"The flavours are so complimentary this dish will become a staple.\" src=\"http:\/\/www.vivehealth.com.au\/blog\/wp-content\/uploads\/2013\/10\/salmon-vive-278x300.jpg\" width=\"278\" height=\"300\" srcset=\"http:\/\/www.vivehealth.com.au\/blog\/wp-content\/uploads\/2013\/10\/salmon-vive-278x300.jpg 278w, http:\/\/www.vivehealth.com.au\/blog\/wp-content\/uploads\/2013\/10\/salmon-vive-950x1024.jpg 950w, http:\/\/www.vivehealth.com.au\/blog\/wp-content\/uploads\/2013\/10\/salmon-vive.jpg 1536w\" sizes=\"(max-width: 278px) 100vw, 278px\" \/><\/a><p id=\"caption-attachment-1572\" class=\"wp-caption-text\">The flavours are so complimentary this dish will become a staple.<\/p><\/div>\n<p><b>Salmon Patties with Sweet Potato Rosti and Watermelon Salad<\/b><\/p>\n<p>Ingredients:<\/p>\n<p><b>Rosti<br \/>\n<\/b>2 Organic sweet potato (we used purple swirl)<br \/>\n2 dessert spoons white rice flour<br \/>\nSplash of olive oil<br \/>\nSeasoning (s&amp;p)<br \/>\n1 clove crushed garlic<br \/>\n<b><br \/>\nWatermelon Salad<br \/>\n<\/b>3 Cups watermelon (1cm Cubes)<br \/>\n1 cucumber sliced and seeded<br \/>\n1\/2Cup fresh mint leaves (chopped)<br \/>\n100g Woodside Goats Milk Fetta (cubed)<br \/>\nSplash of Spiral Foods Mirin<br \/>\n1\/2TSp dried chilli flakes<b><\/b><\/p>\n<p><b>41deg Salmon Patties<\/b><br \/>\nFry patties on each side with rice bran oil in a medium heated pan (from frozen). Remove from heat and rest in foil while preparing rosti and salad. Don&#8217;t be scared to bring these guys out a little early. Let them finish while resting for tender moist salmon patties.<\/p>\n<p>Peel and grate sweet potato squeezing as much moisture from it possible. In a bowl, combine all rosti ingredients until a sticky texture is achieved. Season with salt and pepper to taste. In a medium heated pan with a small amount of rice bran oil, press rosti&#8217;s into patties about 1\/2cm thick.
