{"id":2272,"date":"2015-06-26T02:53:12","date_gmt":"2015-06-26T02:53:12","guid":{"rendered":"http:\/\/www.vivehealth.com.au\/blog\/?p=2272"},"modified":"2015-06-26T02:53:12","modified_gmt":"2015-06-26T02:53:12","slug":"lentil-pumpkin-gluten-free-lasagne","status":"publish","type":"post","link":"http:\/\/www.vivehealth.com.au\/blog\/2015\/06\/26\/lentil-pumpkin-gluten-free-lasagne\/","title":{"rendered":"Lentil and Pumpkin Gluten Free Lasagne"},"content":{"rendered":"<p><strong>Ingredients<\/strong><\/p>\n<p>Serves 4<br \/>\nOlive oil spray<br \/>\n1 large brown onion<br \/>\n4-5 garlic cloves, crushed<br \/>\n\u00bc cup white wine<br \/>\n400g pumpkin, steamed and pureed<br \/>\n415g can lentils, drained and rinsed<br \/>\n794g can Muir Glen Fire Roasted crushed tomatoes<br \/>\n5 tablespoons olives, pitted and roughly chopped<br \/>\n1 cup vegetable stock<br \/>\n\u00bd cup flat leaf parsley, chopped<br \/>\n\u00bd a box of Casalare Gluten Free Lasagne Sheets<br \/>\n60g goat\u2019s hard feta cheese, crumbled (optional)<\/p>\n<p><strong>Directions<\/strong><br \/>\n1. Preheat oven to 180C.\u00a0 Heat a saucepan over medium heat.\u00a0 Spray with oil.\u00a0 Add onion and cook for 5 mins or until starting to colour.<br \/>\n2. Add garlic, wine, pumpkin, lentils, tomatoes, olives and stock.\u00a0 Bring to the boil.\u00a0 Reduce heat to medium.\u00a0 Simmer for 30 minutes.\u00a0 Remove from heat.\u00a0 Stir in parsley and season with salt and pepper.<br \/>\n3. Spoon quarter of lentil mixture into a 5cm deep, 20cm x 20cm ovenproof dish.\u00a0 Top with lasagne sheets.\u00a0 Repeat twice with lentil mixture and lasagne.\u00a0 Spread remaining lentil mixture over lasagne.<br \/>\n4.
