{"id":2312,"date":"2015-06-26T03:39:26","date_gmt":"2015-06-26T03:39:26","guid":{"rendered":"http:\/\/www.vivehealth.com.au\/blog\/?p=2312"},"modified":"2015-06-26T03:39:26","modified_gmt":"2015-06-26T03:39:26","slug":"slow-cooked-lamb-shanks-red-wine-sauce-parsnip-mash","status":"publish","type":"post","link":"http:\/\/www.vivehealth.com.au\/blog\/2015\/06\/26\/slow-cooked-lamb-shanks-red-wine-sauce-parsnip-mash\/","title":{"rendered":"Slow Cooked Lamb Shanks with Red Wine Sauce and Parsnip Mash"},"content":{"rendered":"<p>Serves 4<br \/>\n<strong>Ingredients:<\/strong><br \/>\n3 tablespoons olive oil<br \/>\n2 large leeks, chopped<br \/>\n6 garlic cloves, crushed<br \/>\n4 carrots, sliced<br \/>\n6 lamb shanks<br \/>\nseasoned flour (can be rice flour)<br \/>\n1 x750ml bottle red wine<br \/>\n600ml tomato passata<br \/>\n200ml beef stock<br \/>\n1 bouquet garni<br \/>\n<strong>Sweet Potato Parsnip Mash<\/strong><br \/>\n4 potatoes, scrubbed and peeled<br \/>\n2 small sweet potatoes, scrubbed and peeled<br \/>\n1 parsnip, scrubbed and peeled<br \/>\n2 tablespoons natural coconut yoghurt<\/p>\n<p><strong>Directions:<\/strong><\/p>\n<p>1. Turn on slow cooker to low setting<br \/>\n2. Heat 1 tablespoon oil in fry pan and add onion, carrot and garlic cooking for about 5 minutes, stirring occasionally.\u00a0 When mixture starts to colour, remove from heat and put into slow cooker pot.<br \/>\n3. Toss lamb in seasoned flour.\u00a0 Heat remaining oil in large pot and add the lamb, browning for 2-3 minutes until golden.\u00a0 This may be easier to do in batches.\u00a0 Add the lamb to the slow cooker pot.<br \/>\n4. Add to the slow cooker the wine, passata and stock, season with salt and pepper and add the bouquet garni.\u00a0 Give a good stir and make sure lamb shanks are covered.<br \/>\n5. Cook in slow cooker for 8 hours.<br \/>\n6. Sweet potato and parsnip mash &#8211; cut all vegies into small pieces and add to cold water in a saucepan.\u00a0 Bring to the boil and cook until tender about 10 minutes.\u00a0 Drain off the water and mash up.\u00a0 Then add in the coconut yoghurt and keep mashing until soft and mixed through (if you want a chunkier\/healthier mash, leave the skins on the vegies).<br \/>\n7.
