{"id":2610,"date":"2015-10-28T03:35:14","date_gmt":"2015-10-28T03:35:14","guid":{"rendered":"http:\/\/www.vivehealth.com.au\/blog\/?p=2610"},"modified":"2015-10-28T03:35:14","modified_gmt":"2015-10-28T03:35:14","slug":"super-green-frittata","status":"publish","type":"post","link":"http:\/\/www.vivehealth.com.au\/blog\/2015\/10\/28\/super-green-frittata\/","title":{"rendered":"Super Green Frittata"},"content":{"rendered":"<p><strong>Ingredients:<\/strong><br \/>\n1 cup fresh basil leaves<br \/>\n1\/2 cup fresh flat leaf parsley<br \/>\n3 green onions, roughly chopped<br \/>\n2 zucchini, roughly chopped<br \/>\n80g baby spinach<br \/>\n2 tablespoons extra virgin olive oil<br \/>\n8 eggs<br \/>\n1\/2 cup coconut yoghurt<br \/>\n250g mixed mushrooms, sliced (I used button, swiss brown and Portobello)<br \/>\n200g broccoli, cut into florets<br \/>\n2 garlic cloves, thinly sliced<br \/>\n1\/4 cup pepitas and sunflower seed mix (<a href=\"http:\/\/www.vivehealth.com.au\/Kitz-Activated-Salad-Sprinkles-200g.html\" target=\"_blank\">Kitz Activated Salad Sprinkles<\/a>)<br \/>\n1 tablespoon lemon zest<br \/>\n1\/2 teaspoon dried tarragon or use 2 teaspoons fresh tarragon, chopped<br \/>\nFinely grated parmesan to serve (optional)<\/p>\n<p>1. Place basil, parsley, green onion, zucchini and spinach in food processor.\u00a0 Process until finely chopped.<\/p>\n<p>2. Heat 1\/2 the oil in a 22cm base ovenproof frying pan over medium-high heat.\u00a0 Add zucchini mixture. Cook stirring occasionally for 5-10 minutes or until tender and any liquid has evaporated.<\/p>\n<p>3. Whisk eggs and yoghurt. Season with salt and pepper.\u00a0 Add to zucchini mixture in pan. Stir until well combined.\u00a0 Reduce heat to low.\u00a0 Cook for 8-10mins or until almost set (mixture will wobble slightly in the centre).<\/p>\n<p>4. Meanwhile, heat oil in a frying pan over high heat.\u00a0 Add mushroom, garlic\u00a0and broccoli.\u00a0 Cook, tossing for 5 minutes or until beginning to char.\u00a0 Add seed mix, lemon zest and tarragon.\u00a0 cook tossing for 2 mins.\u00a0 Remove from heat.<\/p>\n<p>5.
