Tag @vivehealth and #vivehealth<\/p><\/div>\n<p>Serves 4-6<\/p>\n<p>Ingredients<\/p>\n<ul>\n<li>2 tbsp extra virgin olive oil<\/li>\n<li>500g organic chicken, cut into bite size pieces<\/li>\n<li>2 large leeks, cut into small slices (you can use most of green)<\/li>\n<li>4 cloves garlic<\/li>\n<li>1-2 tsp hot (or mild) curry powder<\/li>\n<li>1 cup vegetable broth<\/li>\n<li>1 can coconut cream<\/li>\n<li>2 corn cobs, corn removed<\/li>\n<li>1 medium-large red capsicum, julienned<\/li>\n<li>Salt and pepper to taste<\/li>\n<\/ul>\n<p>Method<\/p>\n<ul>\n<li>Saut\u00e9 garlic in 1tbsp of olive oil on medium heat for 2-3mins.<\/li>\n<li>Add chopped leeks and curry powder, and saut\u00e9 for further 5mins.<\/li>\n<li>In a separate pan, stir-fry chicken in 1tbsp of olive oil until golden.<\/li>\n<li>Add chicken to leeks and garlic, and stir-fry for further 3mins.<\/li>\n<li>Add vegetable broth and coconut cream.
