{"id":505,"date":"2012-09-05T05:51:17","date_gmt":"2012-09-05T05:51:17","guid":{"rendered":"http:\/\/www.vivehealth.com.au\/blog\/?p=505"},"modified":"2012-09-05T05:51:17","modified_gmt":"2012-09-05T05:51:17","slug":"eggplant-moussaka-on-spinach","status":"publish","type":"post","link":"http:\/\/www.vivehealth.com.au\/blog\/2012\/09\/05\/eggplant-moussaka-on-spinach\/","title":{"rendered":"Eggplant Moussaka on spinach"},"content":{"rendered":"<p>Here is a great recipe thanks to our customer Caron Evans<\/p>\n<p>Serves 5<\/p>\n<p>Ingredients:<\/p>\n<p>1 large (400g) eggplant, sliced 1cm thick<\/p>\n<p>1 1\/2 large (600g) sweet potato, sliced 1cm thick<\/p>\n<p>2 medium (150g) zucchini, sliced<\/p>\n<p>1\/2 cup (100g) quinoa (raw weight)<\/p>\n<p>1 bunch English spinach, washed<\/p>\n<p>Sea salt &amp; Pepper<\/p>\n<p style=\"text-align: left;\"><strong>Roasted tomato sauce:<\/strong><strong><\/strong><\/p>\n<p style=\"text-align: left;\">500g ripe tomatoes, chopped<\/p>\n<p>1 medium onion, chopped<\/p>\n<p>1\/2 cup (100g) green lentils (raw weight)<\/p>\n<p>1-2 cloves garlic, crushed<\/p>\n<p>Sea salt, pepper, oregano, basil<\/p>\n<p>1-2 bay leaves<\/p>\n<p>Sprig of rosemary<\/p>\n<p>1\/2 cup (100ml) filtered water<\/p>\n<p>&nbsp;<\/p>\n<p>Method:<\/p>\n<ol>\n<li>Sprinkle eggplant with sea salt and leave for 20-30 minutes. Rinse and dry.<\/li>\n<li>Pre-bake all sliced vegetables on a tray.<\/li>\n<li>Cook rinsed quinoa at a ratio of 1 cup seeds to 2 cups water on low heat and covered until all water is absorbed.<\/li>\n<li>Soak lentils for 2-3 hours, rinse and boil in fresh water. Mix quinoa and lentils with some of the tomato sauce. Stack in layers in baking dish, starting with sweet potato and finishing with a layer of eggplant. Bake at 160C for approximately 30-40 minutes, covering halfway through cooking time. If necessary, rest before cutting into squares.<\/li>\n<li>Serve on spinach leaves with extra tomato sauce and top with a dollop of cashew cheese or pesto.<\/li>\n<li><strong>For the tomato sauce:<\/strong> Roast tomatoes, onions and garlic in oven until they get some colour. Add spices, herbs and water. Simmer for 15-20 minutes and blend in a food processor.
