Why not try this delicious granola recipe, the perfect summer breakfast to prep for the week &amp; canvas to add any fresh seasonal fruit. With a base of oats &amp; quinoa flakes for a great hit of protein &amp; low GI carbohydrates, nuts &amp; seeds for a boost of healthy fat &amp; dietary fibre &amp; cinnamon for the perfect amount of spice.<\/p>\n<p><em>Recipe adapted from one of our favourite vegetarian cookbooks by <span style=\"text-decoration: underline;\">Anna Jones | A Modern Way to Eat.\u00a0<\/span><\/em><\/p>\n<p><span style=\"text-decoration: underline;\">Here&#8217;s what you&#8217;ll need:<\/span><\/p>\n<ul>\n<li>150gm (2 large handfuls) oats (Uncontaminated GF if needed)<\/li>\n<li>150gm (2 large handfuls) quinoa flakes<\/li>\n<li>30g coconut (Desiccated or Shredded)<\/li>\n<li>150gm almonds (Slivered) or other nuts roughly chopped &#8211; Pecans, Walnuts or Macadamias work well<\/li>\n<li>80-100gm Seeds (Sunflower + Pepitas)<\/li>\n<li>1 tsp Ground Cinnamon<\/li>\n<li>7-8 tbsp Maple Syrup or Honey (Can use half maple \\ half coconut oil to get desired sweetness)<\/li>\n<li>100-150gm ( Apricots &amp; Cranberries (roughly chopped) &#8211; or any dried fruit<\/li>\n<li>1 tsp Vanilla (optional)<\/li>\n<\/ul>\n<ol>\n<li>Preheat oven to 170C (fan forced) &amp; line <span style=\"text-decoration: underline;\">1 large<\/span> or <span style=\"text-decoration: underline;\">2 small<\/span> baking trays with<a href=\"http:\/\/www.vivehealth.com.au\/blog\/2019\/02\/05\/cinnamon-maple-apricot-granola-gf-df-vegan\/healthy-breakfast-organic-oat-flakes-in-a-glass-jar-grey-textile-background\/\" rel=\"attachment wp-att-5265\"><img decoding=\"async\" loading=\"lazy\" class=\"wp-image-5265 alignright\" src=\"http:\/\/www.vivehealth.com.au\/blog\/wp-content\/uploads\/2019\/02\/oats-glass-jar.jpeg\" alt=\"\" width=\"255\" height=\"327\" srcset=\"http:\/\/www.vivehealth.com.au\/blog\/wp-content\/uploads\/2019\/02\/oats-glass-jar.jpeg 5468w, http:\/\/www.vivehealth.com.au\/blog\/wp-content\/uploads\/2019\/02\/oats-glass-jar-234x300.jpeg 234w, http:\/\/www.vivehealth.com.au\/blog\/wp-content\/uploads\/2019\/02\/oats-glass-jar-768x984.jpeg 768w, http:\/\/www.vivehealth.com.au\/blog\/wp-content\/uploads\/2019\/02\/oats-glass-jar-800x1024.jpeg 800w\" sizes=\"(max-width: 255px) 100vw, 255px\" \/><\/a> baking paper.<\/li>\n<li>Add all dry ingredients into a bowl (except dried fruit) &amp; mix until evenly combined.<\/li>\n<li>Add maple syrup &amp; vanilla &amp; toss to evenly coat.<\/li>\n<li>Spread evenly baking tray(s) &amp; place in oven.<\/li>\n<li>Cook for 15-20 minutes, stirring granola regularly to ensure even cooking\/browning.<\/li>\n<li>Add in chopped fruit &amp; cook for a further 5-10 minutes depending on texture preferred. This extra cooking help the fruit develop a slightly caramelized flavour.
