Whether you&#8217;re vegan or not, these plant-based sausage will definitely impress. So moreish, satisfying &amp; just. so. damn. delicious! They can easily be made gluten-free by opting for gluten-free puff pastry (Gluten Free Bakery have the BEST gluten-free puff pastry which is available only instore at Vive).<\/p>\n<p>This recipe comes courtesy of <a href=\"https:\/\/mygoodnesskitchen.com\/\">My Goodness Kitchen!<\/a> We highly recommend checking out her other vegan recipes too, there are so many incredible plant-based meals that everyone in the family will enjoy, even the hardcore meat-eaters.<\/p>\n<p>Make these sausage rolls into regular or mini size rolls depending on your preferences. The mixture can be made ahead of time &amp; stored in the refrigerator until you need to use it.<\/p>\n<p>&nbsp;<\/p>\n<h4><strong>Ingredients<\/strong><\/h4>\n<ul>\n<li>1\u00a0tbsp\u00a0olive oil<\/li>\n<li>1\u00a0yellow onion\u00a0finely diced<\/li>\n<li>2\u00a0celery ribs\u00a0finely diced<\/li>\n<li>1\u00a0medium carrot\u00a0finely diced<\/li>\n<li>3\u00a0garlic cloves\u00a0minced<\/li>\n<li>10\u00a0chestnut mushrooms\u00a0well chopped in a food processor<\/li>\n<li>1\u00a014-oz can lentils, drained and rinsed\u00a0400 grams<\/li>\n<li>1\u00a0tsp\u00a0dried rosemary (we also added some dried thyme &amp; chili flakes in for extra pizzazz)<\/li>\n<li>1\u00a0tbsp\u00a0Dijon mustard<\/li>\n<li>1\u00a0tbsp\u00a0nutritional yeast<\/li>\n<li>1\u00a0tbsp\u00a0red miso paste\u00a0or any you have<\/li>\n<li>1\u00a0tbsp\u00a0apple cider vinegar<\/li>\n<li>sea salt<\/li>\n<li>cracked pepper<\/li>\n<li>1\u00a0cup\u00a0baby spinach\u00a0finely chopped<\/li>\n<li>3\u00a0sheets\u00a0puff pastry (or gluten-free puff pastry)<\/li>\n<li>3\/4\u00a0cup\u00a0panko bread crumbs\u00a0scant (or gluten-free rice\/bread crumbs)<\/li>\n<li>water<\/li>\n<li>3\u00a0tbsp\u00a0dairy-free milk<\/li>\n<li>1\u00a0tsp\u00a0black or white sesame seeds <em>(optional &#8211; for decoration)<\/em><\/li>\n<\/ul>\n<p><span style=\"color: #000000;\"><b>Method<\/b><\/span><\/p>\n<ol>\n<li>Heat the olive oil in a large pan over medium heat and add the onion, celery and carrot. Saut\u00e9 for 5 minutes, then add the garlic and cook for another 3 minutes or until all the vegetables are tender.<\/li>\n<li>Add the chopped mushrooms and saut\u00e9 for 2 minutes and then add the lentils, rosemary, Dijon mustard, nutritional yeast,\u00a0red miso paste and apple cider vinegar. Cook the mixture down for 5 minutes, until most of the moisture has evaporated. Season with salt and pepper and add the chopped spinach.\u00a0Remove the mixture from the heat and transfer it to a large bowl to cool completely to avoid soggy rolls.<\/li>\n<li>To prepare the sausage rolls, preheat the oven to 400\u00b0F (200\u00b0C) and line two baking trays with greaseproof paper. Remove the puff pastry from the freezer to thaw for 10 minutes. Stir the breadcrumbs into the \u201csausage\u201d mixture. The mixture should hold together when squeezed; add some more breadcrumbs\u00a0if needed.<\/li>\n<li>Slice the thawed pastry sheets in half lengthwise. Take one-half and lay it with the long side closest to you. Wet the sides and the top edge of the pastry with water spoon 3 to 4 tablespoons (45 to 60 g) of the filling onto the pastry edge closest to you. Shape the filling into a log. Gently but firmly roll the pastry and filling away from you to form a large roll. Press the edges to seal.<\/li>\n<li>Slice the roll into 4 or 5 smaller rolls and make an incision into the top of each. Brush each roll with the dairy-free milk, sprinkle with sesame seeds and place on the lined baking tray seam side down.
