{"id":761,"date":"2012-10-31T22:29:40","date_gmt":"2012-10-31T22:29:40","guid":{"rendered":"http:\/\/www.vivehealth.com.au\/blog\/?p=761"},"modified":"2012-10-31T22:29:40","modified_gmt":"2012-10-31T22:29:40","slug":"chicken-burgers-with-beetroot-dip","status":"publish","type":"post","link":"http:\/\/www.vivehealth.com.au\/blog\/2012\/10\/31\/chicken-burgers-with-beetroot-dip\/","title":{"rendered":"Chicken Burgers with Beetroot Dip"},"content":{"rendered":"<p><strong><br \/>\nChicken Burgers<\/strong><strong><br \/>\n<\/strong>Preparation Time 10 minutes<br \/>\nCooking Time 12 minutes<\/p>\n<p><em><strong>Ingredients<\/strong> <\/em>(serves 4)<br \/>\n500g organic chicken mince<br \/>\n2 eggs, beaten<br \/>\n1\/4 cup LSA (linseed, sunflower, almond meal)<br \/>\n1 small red onion, finely diced<br \/>\n2 tsp finely grated lemon or lime rind<br \/>\n1 tbspn drained capers, coarsely chopped<br \/>\n2 tbspns finely chopped fresh coriander<br \/>\nFresh red chilli chopped finely to taste<br \/>\nSalt and ground black pepper, to taste<br \/>\nOlive oil, for cooking<br \/>\n2 tbsp besan flour<\/p>\n<p><em><strong>Method<\/strong><\/em><br \/>\n1. Combine chicken mince, red onion, lemon or lime rind, capers, egg, LSA, besan flour, milk, coriander and chilli in a bowl. Season with salt and pepper and mix well.<br \/>\n2. Shape mixture into 4 equal patties (each 10cm in diameter and 2cm thick).<br \/>\n3. Heat the olive oil in a frying pan over medium heat and cook the patties for 6-7 minutes each side or until they are golden and cooked through.<br \/>\n4. Remove the cooked patties from the pan and drain on paper towel.<br \/>\n5. Serve with a green salad and top with beetroot dip. Alternatively place a patty in a roll and top with beetroot dip, tomato, cucumber and rocket.<\/p>\n<hr align=\"center\" size=\"2\" width=\"100%\" \/>\n<p><strong>Beetroot Dip<\/strong><\/p>\n<p><em><strong>Ingredients<\/strong><\/em><br \/>\n2 large beetroot, washed<br \/>\n2 cloves garlic, crushed<br \/>\n2 tbsp tahini<br \/>\nSqueeze half a lemon<br \/>\nSalt &amp; pepper to taste<\/p>\n<p><em><strong>Method<\/strong><\/em><br \/>\n1. Wrap the beetroot in alfoil individually and cook for 1 hour or until soft in a moderate oven.<br \/>\n2. Allow to cool and peel off skin, also chopping off ends.<br \/>\n3. Place in a vitamiser or food processor and add the remaining ingredients.<br \/>\n4. Blend well until a puree consistency.<br \/>\n5. Alter tahini and lemon juice quantities to your tastebuds.<br \/>\n6.
