{"id":2276,"date":"2015-06-26T02:58:18","date_gmt":"2015-06-26T02:58:18","guid":{"rendered":"http:\/\/www.vivehealth.com.au\/blog\/?p=2276"},"modified":"2015-06-26T02:58:18","modified_gmt":"2015-06-26T02:58:18","slug":"black-bean-salad","status":"publish","type":"post","link":"https:\/\/www.vivehealth.com.au\/blog\/2015\/06\/26\/black-bean-salad\/","title":{"rendered":"Black Bean Salad"},"content":{"rendered":"<p><strong>Ingredients<\/strong><br \/>\n2 x 400g cans black beans, drained and rinsed well<br \/>\n1 very large tomato, chopped<br \/>\n2-3 cobs of corn &#8211; Steamed or grilled and sliced off<br \/>\n1\u20442 red onion, chopped<br \/>\n1 can sliced water chestnuts, drained and rinsed<br \/>\n1 bunch coriander, chopped<br \/>\n1\u20442 lime, juice and zest<br \/>\n3 tablespoons balsamic vinegar or more to taste<br \/>\n2 tablespoons toasted pine nuts<\/p>\n<p><strong>Directions<\/strong><br \/>\n1. In a dry pan, toast pine nuts until just turning golden (make sure they don\u2019t burn), Set aside to cool.<\/p>\n<p>2. Add beans, tomatoes, corn, onion and water chestnuts to a bowl and mix.<\/p>\n<p>3. Add coriander, cooled pine nuts, lime and balsamic vinegar and mix again.
