Grind the almonds in a food processor.<br \/>\n2. Add the dates and process together into a dough.<br \/>\n3. Pulse in the apples, cinnamon, and enough water to create a dough that will hold together when pressed.<br \/>\n4. Press the mixture into two small (3-4&#8243;) cheesecake pans or 1 large cheesecake pan<\/p>\n<p><strong>Filling:<\/strong><br \/>\n2 cups peeled, diced apples<br \/>\n3\/4 cup cashews<br \/>\n3 tablespoons maple syrup<br \/>\n1 teaspoon lemon juice<br \/>\n1 teaspoon vanilla<br \/>\n2 tablespoons melted coconut butter<br \/>\n4 tablespoons melted coconut oil<br \/>\nPinch of salt<\/p>\n<p>5. Blend the first 5 ingredients until completely smooth.<br \/>\n6. Add the butter and oil. Blend again to incorporate.<br \/>\n7. Pour over the crusts.<br \/>\n8. Chill in the fridge for 12 hours, or in the freezer for 5-6 hours and in the fridge for 1-2 hours before removing the ring.<\/p>\n<p><strong>Caramel Sauce:<\/strong><br \/>\n1\/4 cup maple syrup<br \/>\n2 tablespoons lucuma, sifted<br \/>\n3 1\/2 tablespoons raw almond butter<br \/>\n1\/2 teaspoon pure vanilla<\/p>\n<p>9. Add the maple, almond butter, and vanilla to a small bowl. Sift the lucuma over top.
