Oat bran is the outer husk of the oat grain which contains the bulk of the dietary fibre of the grain, along with other beneficial nutrients. A common use of oat bran is as an additive in baked goods like muffins, scones and breads where it adds a very distinctive texture and rich, nutty flavour. It is also added to or used alone as a cereal.
For a healthy breakfast, put together ¼ cup of oat bran, a tiny pinch of salt and a cup of water in a small sauce pan. Bring to the boil, then simmer for 5 minutes. Add milk and a sprinkle of brown sugar. Or, for added flavour, cook with a tablespoon of diced apricots
