Recipe of the Week – Power Packed Protein Pancakes

These pancakes are a personal favourite of mine. Great for breakfast or a mid morning / afternoon snack!

Protein Packed Pancakes (2 serves) – 3 ripe bananas, 2 large eggs, 1 dessert spoon ABC nut spread, 1/2 cup almond meal, 1 dessert spoon Pea Protein Isolate, 50 mls coconut milk. Blend bananas, eggs, nut spread, almond meal, pea protein and coconut milk to make a runny batter. Add water to thin if needed.  Poor small amount into hot pan and cook both sides till golden.
