Salad in a Jar, an easy everyday salad creation.

So in our adventures online for nutrition and how to keep the everyday cooking spicy/varied.  We came across this blog post by Cassie from Back To Her Roots.  It is her exploration of something that is trending on Pinterest at the moment.  But she isn’t the only one using the salad in a jar concept and the variety of salad options you can come up with is only limited by what you have in your fridge and time.  It’s such a good idea as this is something you can put together for 3 or 4 days of salad prep for the week.   Using a plastic option may make it a fun idea to send the kids of school with it, please become a school lunch trend. x

The goal is to put the dressing in first.  Then add either Tofu, some grains or root vegetables that will soak up the salad and then other layers of either cheese, nuts etc. and add the lettuce/spinach last.  That way they stay crispy and fresh.

Some cafes are selling them prepped, but these are so easy to do and the jars are easily bought from Wheel and Barrow.  What a beautiful way to keep you inspired to eat healthy and with the least amount of effort.  And you can walk into work with you salad creations and feel like you are adding some colour to the work fridge.

Our salad in a jar recipe;

Roza’s Chilli Mayo

lemon juice

oven roasted pumpkin

sunflower seeds

a few pieces of feta

cucumber finely sliced

peeled carrot

Spinach leaves (baby spinach not the big ones just to be clear).
